Today we have a recipe coming to you from Sarah Atkinson, President of See You Later Leaner and Diet and Nutrition Coach! Sarah is also the wife of Core Nutritionals Sponsored Athlete, Adam Atkinson. Sarah and Adam know a thing or two about delicious, macro friendly meals, so you know we’re in for a treat with this one.

So what inspired Sarah to whip up this oat bake?

“I love baking and experimenting with ways to add protein to meals and especially desserts. I know that when dieting it is easy to get stuck in food ruts and it's fun to change it up. One thing a lot of people crave when dieting is something sweet. My apple cinnamon oat bake satisfies your sweet tooth and has some good volume without all the fats of most traditional desserts or breakfast items. I like to eat this for breakfast or as a snack. I store it in the fridge and eat it cold straight out of the fridge or microwave it for about 40 seconds. My husband loves the convenience of it because he can just grab a square and eat it as he walks out the door in the morning, while I prefer mine warmed up at night with a tablespoon of light butter on top.”

Apple Cinnamon Oat Bake

Ingredients:

    • 3 scoops Cinnamon French Toast PRO
    • 2 cups oats
    • 1 cup almond milk
    • ¼ cup unsweetened applesauce
    • ¼ cup sugar free syrup
    • 150g granny smith apple, diced (one large apple peeled and diced)
    • 1/3 cup egg whites
    • 1.5 Tbsp cinnamon
    • 2 tsp baking powder

Instructions:

      1. Preheat oven to 350 degrees.
      2. Stir together dry ingredients.
      3. Mix in wet ingredients and add diced apple.
      4. Bake in a 7x9 casserole dish for 30 minutes.
      5. Enjoy!
