Ingredients
Dry Ingredients:
- 2 scoops Vanilla Cream Core PRO
- 2 cups (160g) wheat germ
- 1 tbsp (8g) sugar free, fat free cheesecake mix
Wet Ingredients:
- 1 medium banana
- ¾ cup (150g) egg substitute
- 1 tbsp (14g) flax “egg”
- 1 cup (242g) drained, canned peaches (no sugar added version)
- ¼ cup zero calorie sweetener
Directions
Preheat oven to 350° Fahrenheit. Purée bananas, then combine all wet ingredients and blend until smooth. Combine dry ingredients and mix well into the wet mixture.
Scoop batter evenly into 12 lightly sprayed slots of a muffin pan. Bake for 16-20 minutes; allow Peaches & Vanilla Cream PRO Muffins to cool slightly before serving.
Optional: This recipe can also be made into a loaf by pouring batter into a loaf pan and increasing bake time to approximately 30 minutes.
