Lemon Blueberry Froyo Cups

What’s up Crush It Crew?

I don’t know about you, but lemon blueberry is one of my favorite flavor combos, especially as we approach the summer! The combination of Lemon Pound Cake ISO and lemon jello mix packs these full of a fresh lemon flavor, plus you get blueberries in every bite!

These froyo cups are incredibly easy to make and make for the perfect healthy snack any time of day. With 8 grams of protein and only 2 carbs each, you can indulge in several completely guilt free. These would also be an awesome snack for kids!

Tip: These will get very solid when frozen! You may want to let them sit at room temperature for a minute or two before eating.

A quick run-down of the ingredients:

ISO: I choose ISO specifically for the Lemon Pound Cake flavor. You could also sub in PRO or even VEGAN depending on your preference.

2% plain Greek yogurt: I went with 2% Greek yogurt to give it a thicker consistency. Even with a higher fat yogurt, you’re still only getting 1 gram of fat per cup. Make sure you’re picking plain yogurt over flavored to save on the carb and added sugars.

Sugar Free Jello mix: This adds flavor and more consistency and thickness to the yogurt.

Blueberries: I used fresh blueberries but frozen would work too. Don’t like blueberries? Raspberries or strawberries would make an excellent swap!

Lemon Blueberry Froyo Cups

Ingredients:

  • 28g (1 scoop) Lemon Pound Cake ISO
  • 340g 2% plain Greek yogurt
  • 4g Sugar Free Jello Mix
  • 70g blueberries
  • Stevia to taste

Instructions:

    1. Mix plain Greek yogurt, ISO protein powder, jello mix and stevia in a large bowl.
    2. Add blueberries and mix well.
    3. Line a muffin tin with 8 baking cups. Optional step is to spray cups with a bit of non-stick cooking spray to prevent sticking. Silicone cups would be a great option too.
    4. Spoon Greek yogurt mixture evenly into 8 cups.
    5. Freeze tray for a minimum of 2 hours.
    6. Enjoy!
